In the proposed project multiphase dispersion systems will be studied. Relations between complex rheological parameters (measured with use of rotational rheometers) and textural attributes (measured by sensory analysis) will be determined. The knowledge of psychorheological laws is very important for the quantitative description of flow and deformation phenomena, taking place during sensory tests. On the basis of these laws, the subsequent instrumental analysis may be effected under rheologically comparable conditions the main scientific contribution is the complex and systematic investigation of above relationships, which has not been achieved in such an extent. The results would enable conclusions concerning the complex characterisation of texture and the uses of multiphase dispersion systems in industrial applications.
